It’s hard to believe coccoli con crudo haven’t travelled outside Tuscany – yet! The near universal appeal is easy to understand, as is the endearing name, “cuddles;” puffed pillows of fried pizza dough, eaten plain as a traditional street food, or better, torn open and stuffed with cool, creamy and tangy stracchino (Italian cream cheese) and a slice of salty cured prosciutto. Every time I go out for a tuscan dinner I take it.
Coccoli are also called ficattole or donzelle. It depends in which part of Tuscany you are.
Definitely one of the best starters ever.
I love it.
